Broccoli and Cheddar Cheese Nuggets

Today, I made Barrett some of these yummy broccoli and cheese nuggets for lunch.



They were a success!



To make these, you need:

16 oz of frozen broccoli, cooked, drained and chopped
1 cup bread crumbs
1 1/2 cups shredded cheese
3 eggs

Preheat oven to 400. Coat baking sheet with olive oil. Combine all ingredients and mix well. Shape mixture into nuggets and place on baking sheet. Bake 20-25 minutes and turn over after 15. I found the recipe at Momtastic's Wholesome Baby Food.

It was a pretty big recipe, so I'm going to try to freeze half of them. Hopefully they will re-heat well because I am running out of ideas to pack in Barrett's lunch for daycare!
